
Exquisite Kerala Style Mutton Stew: A Taste of Tradition

This coconut milk duck curry is rich and flavorful, with perfectly cooked meat. Unlike other Indian curries, this one skips the chili powder in favor of green chilies, ginger, garlic, and freshly crushed black pepper. The addition of coconut milk creates a thick, luscious gravy.

How to Cook Duck : Cooking duck differs from cooking chicken and can be challenging for first-timers. Duck meat, often used with the skin on, requires a longer cooking time. It can be cooked in an open vessel on low flame for 30+ minutes or pressure cooked for a quicker, easier option, as detailed in my recipe.
Duck Meat: With or Without Skin? Duck skin is a flavor powerhouse, ideal for roasts and curries. Note that broiler ducks have more meat, while country-style ducks have less meat and more bones. I prefer country-style duck for its superior taste.
Is Duck Fat Healthy? Duck meat is rich in fat, mainly from its skin. Duck fat, high in monounsaturated fat, helps lower LDL cholesterol, reducing cardiovascular disease risk. It’s an excellent cooking fat, adding distinct aroma and flavor to dishes like roasted vegetables, fried fish, and seared steak. For this recipe, leave the skin on to use at least half of the fat for flavor, and render the rest for later use. For the calorie-conscious, omit the skin and fat altogether.
If Your Duck Smells Bad : Fresh duck meat, especially wild-caught, can have a strong odor. To remove it, rub the cleaned meat with a turmeric and vinegar mix, let sit for 10-15 minutes, then rinse under running water. Lemon juice can substitute for vinegar.
